‘Wine quality starts in the vineyard’

The Castle’s vineyards wind their way through clay, limestone and stony soil.

It is the combination of the soil and the vine that makes the difference: each vine has its own characteristics, different needs and responses, and knowing them thoroughly in order to anticipate them is indispensable.

Soil analysis, the choice of rootstocks and the selection of clones, as well as the containment of production and the careful and conscious management of the vine throughout its production cycle, make it possible to obtain healthy grapes and uniform ripening: the quality of the grapes is the heart of a good wine.

Terroir

Castello di Gabbiano is located in the heart of Chianti Classico and has a total of 165 hectares under vine, mainly in the municipality of San Casciano in Val di Pesa, where the vinification and ageing cellars are located. Some hectares also extend into the area of San Donato in Poggio, further enriching the variety and complexity of our terroir.

Grapes

Sangiovese is the beating heart of our vineyards, accounting for about 85% of the planted area. Alongside it, we cultivate international varieties such as Merlot, Cabernet Sauvignon, Cabernet Franc, Syrah and Petit Verdot, along with native grape varieties such as Colorino, Malvasia and Vermentino, which enrich our production with unique and complementary nuances.

The Cellar

“The ancient cellar of the castle, with their typical vaulted structures, witness of the early wine making since 14th century have seen the development of this art since then right through to the end of the last century!”
Skilfully restored with full respect for their original architecture, today they host the great casks and barriques for the ageing of the wines of the castle.
